Mastering the meat thermometer
One of the cook's most valuable tools is the meat thermometer. Here are some tips from our chef about how to use one.
- • Insert the probe into the thickest part of the roast, not into fat into fat stuffing. Avoid contact with bone.
- • Oven-proof thermometers are inserted before roasting and left in for the entire cooking process. Digital thermometers are oven-proof and provide an automatic readout so the cook will know precisely when the roast has reached its correct internal temperature.
- • Instant-read thermometers are not oven proof. Insert near the end of cooking time, read the temperature, then remove. Return roast to the oven if necessary.
- • Disposable pop-up indicators are for one time use only. Insert before roasting and leave in for entire cooking time.
